Select ripe Chardonnay grapes from the vineyard, ensuring they are free from rot or defects. This will provide the best flavor profile for the wine.

Harvesting Grapes

Crush the harvested grapes in a clean container to release the juice. You can use a grape crusher or do it manually, ensuring the skins are broken but not overly mashed.

Creating Must

Sprinkle the wine yeast evenly over the surface of the must and gently stir it in. This will start the fermentation process.

Cover the container with a clean cloth and let it sit at room temperature (20-25°C) for about 5-7 days. Stir daily to ensure even fermentation.

First Fermentation

After fermentation, strain the must through a fine mesh strainer or cheesecloth into another clean container to separate the liquid from the solids.

Incorporate 50g of caramel and 30g of brown sugar into the strained wine, stirring until fully dissolved. This will enhance the flavor profile.

Add 1 tsp of cinnamon powder and 1 tsp of freshly grated nutmeg to the wine, stirring gently to mix.

Introduce 50g of oak chips into the wine and allow it to age for at least 3 months in a cool, dark place. This will impart additional flavors and complexity.

After aging, add 1 tsp of sulfites to the wine for preservation. Mix gently.

Carefully bottle the wine using a siphoning method to avoid disturbing the sediment. Seal the bottles tightly.

Label the bottles with the date and type of wine. Store in a cool, dark place for further aging, if desired.
