Prepare glass (optional salted rim)
If using a salted rim, rub a lime wedge around the outer rim of a coupe or rocks glass, then dip the rim lightly into coarse or smoked salt. Set the glass aside.

Dry shake (if using egg white)
In a cocktail shaker, add the blanco tequila, reposado tequila, agave syrup, fresh lime juice, fresh grapefruit juice, fresh orange juice, aperitif/orange liqueur, and egg white (if using). Close the shaker and shake vigorously without ice for 12–15 seconds to emulsify and build foam.

Wet shake
Add a generous scoop of ice to the shaker. Shake again vigorously for 12–18 seconds until the shaker feels very cold to the touch and the outside is frosty. This chills and dilutes the cocktail to balance the flavors.

Strain and serve
Double-strain the cocktail into the prepared coupe or rocks glass (use a fine mesh strainer if you used egg white to catch foam bits and ice shards). If not using egg white, you may single-strain over fresh ice in a rocks glass.

Finish
Add 2 dashes of Angostura bitters on top of the foam (or directly into the surface). Using a toothpick or small skewer, gently swirl the drops for a subtle aromatic pattern.
