Prep tortillas
Warm tortillas briefly to make them pliable: heat a dry skillet over medium for 20–30 seconds per side or microwave one tortilla covered with a damp paper towel for 15–20 seconds. Keep warm under a clean towel.
Layer ingredients
Lay one warmed tortilla flat. Drizzle about 1 teaspoon of olive oil across the center. Arrange 2 oz (about 4 slices) of fresh mozzarella in a line down the middle, overlapping slightly. Place 4–6 tomato slices over the mozzarella, then top with 6 basil leaves and a small handful (about 1/2 cup) of arugula if using. If adding prosciutto or sun-dried tomatoes, layer them on now.
Season
Sprinkle each assembled center with about 1/4 teaspoon salt, a pinch (about 1/4 teaspoon) of freshly ground pepper, and a light dusting (approx. 1/8 tsp) of garlic powder if desired. Drizzle about 1/2 tablespoon of balsamic glaze and 1 teaspoon of olive oil over the fillings.
Fold and roll
Fold the bottom edge of the tortilla up over the filling, then fold the two sides in toward the center and continue rolling tightly to form a secure wrap. Repeat with remaining tortillas and fillings.
Optional sear
For a warm, lightly crisp exterior: heat 1 teaspoon olive oil in a nonstick skillet over medium. Place seam-side down and press gently with a spatula or sandwich press. Cook 1–2 minutes until golden, flip and cook another 1–2 minutes. This step also helps melt the mozzarella slightly.
Slice & serve
Trim each wrap on a diagonal, cutting in half or into thirds. Serve immediately while warm, or wrap tightly in parchment and refrigerate up to 24 hours for later eating. Drizzle extra balsamic glaze to taste at serving.
Dressing & Seasoning
Make simple dressing: in a small bowl whisk together 4 tbs extra-virgin olive oil, 2 tbs balsamic glaze (if glaze is very thick, whisk with a teaspoon of warm water), 1 tsp salt, and 1 tsp freshly ground black pepper until combined. Reserve about 1 tsp olive oil and 1/2 tbs glaze per wrap for assembly; keep remainder in refrigerator up to 3 days for more wraps or salads.
Optional Add-ins
If using prosciutto, lay one slice per wrap directly on the tortilla before adding mozzarella so it nests against the cheese. If using sun-dried tomatoes, sprinkle them sparingly (about 1/4 tbs per wrap) with the other fillings to avoid overpowering the fresh flavors.
