Prepare the Garlic

Preheat the oven to 400°F (200°C). Slice the top off the whole bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft.

Prepare the Fries

While the garlic is roasting, wash and cut the russet potatoes into fry shapes. Toss them in a bowl with olive oil, salt, and black pepper until evenly coated.

Bake the Fries

Spread the fries in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Make the Blue Cheese Fondue

In a small saucepan, combine 1 cup of heavy cream and 1 cup of crumbled blue cheese over medium heat. Stir until the cheese is melted and the sauce is smooth. Remove from heat.

Assemble the Dish

Once the fries are done, remove them from the oven. Squeeze the roasted garlic over the fries, then pour the blue cheese fondue sauce generously over the top.
