In a large brew kettle, heat 4 gallons of filtered water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Flaked Wheat to the water and stir well to ensure all grains are saturated.

Prepare the Mash

Maintain the temperature at around 152°F (67°C) for 60 minutes. Stir occasionally to avoid clumping. After 60 minutes, raise the temperature to 170°F (77°C) to stop the enzymatic process.

Mashing Process

Remove the grains by straining the mash into a boil kettle and add enough water to bring the total volume to 5 gallons. Bring the wort to a boil.

Start the Boil

Once boiling, add 0.5 oz of Mosaic Hops and 0.5 oz of Citra Hops. Boil for 45 minutes.

Add Hops

In the last 5 minutes of the boil, add 0.25 oz of Mosaic Hops and 0.25 oz of Citra Hops to enhance aroma.

Finishing Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal the fermenter with an airlock.

Pitch Yeast

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks, until fermentation activity has stopped.

Fermentation

In a small pot, dissolve 3 oz of corn sugar in 2 cups of water. Bring to a boil and then cool.

Prepare Priming Sugar

Once fermentation is complete, gently mix the priming sugar solution with the beer. Bottle the beer in sanitized bottles and cap them.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for 1-2 weeks before chilling and enjoying.
