Harvest ripe Cabernet Franc grapes and wash them thoroughly. Remove any stems and leaves.

Prepare the Grapes

Crush the grapes and place them in a fermentation vessel. Add the sugar and yeast, then pour in the water. Stir gently to combine.

Fermentation

Allow the mixture to ferment at room temperature for 7-10 days, stirring occasionally until bubbling slows down.

Primary Fermentation

Once primary fermentation is complete, transfer the liquid to a clean bottle, leaving sediment behind. Seal tightly and store in a cool dark place for 6-8 weeks.

Secondary Fermentation

After 6-8 weeks, carefully open the bottles to release pressure. If desired, add a dosage of sugar before resealing for sweetness. Allow to carbonate for an additional 2-3 weeks.

Bottle Conditioning

Wash the fresh strawberries and remove the green tops. Cut them in half and place them in a bowl.

Prepare the Strawberries

Sprinkle the strawberries with a little sugar to enhance their natural sweetness. Set aside for 10 minutes to macerate.

Sweeten the Strawberries

In a mixing bowl, pour the heavy cream. Add the powdered sugar and vanilla extract. Whip until soft peaks form.

Whip the Cream

In serving glasses, layer the macerated strawberries at the bottom, followed by a generous dollop of whipped cream on top.

Assemble the Dessert

Pour the prepared Rosé Crémant de Loire into glasses and serve alongside the strawberries and cream for a delightful pairing.
