Method
Preparation
Prepare the Marinade
In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, salt, and black pepper to form a marinade.
Marinate the Boar Tenderloin
Place the boar tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, preferably overnight.
Cooking
Preheat the Oven
Preheat your oven to 200°C (400°F).
Sear the Tenderloin
Heat a large oven-safe skillet over medium-high heat. Remove the tenderloin from the marinade and shake off excess. Sear the tenderloin in the skillet for about 3-4 minutes on each side, until browned.
Roast in the Oven
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 63°C (145°F) for medium-rare.
Rest the Meat
Remove the skillet from the oven and let the tenderloin rest for 10 minutes before slicing.
Serving
Prepare the Sauce
In the same skillet, add red wine to deglaze, scraping the bottom with a wooden spoon to incorporate the browned bits. Simmer for 5 minutes until slightly reduced.
Serve the Boar Tenderloin
Slice the rested boar tenderloin and arrange it on a serving platter. Drizzle the red wine sauce over the slices and garnish with fresh parsley.
