    Prepare the Lamb

    Preheat your grill or grill pan over medium-high heat. Season the frenched lamb ribs with olive oil, salt, and black pepper. Grill the lamb for about 4-5 minutes on each side, or until you achieve a nice char and desired doneness. Remove from the grill and let rest.

    Make the Chimichurri

    In a bowl, combine parsley, minced garlic, red wine vinegar, oregano, red pepper flakes, and a pinch of salt. Drizzle in olive oil and mix well. Adjust seasoning to taste.

    Prepare the Parsnip Puree

    In a pot, bring water to a boil and add chopped parsnips. Cook until tender, about 15-20 minutes. Drain and return parsnips to the pot. Add butter and cream, then blend until smooth. Season with salt and pepper to taste.

    Plate the Dish

    On each plate, place a generous scoop of parsnip puree, top with grilled lamb pops, and drizzle with chimichurri sauce.
