    Prepare the Potatoes

    Peel and chop the potatoes into uniform pieces. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Make Whipped Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, and season with salt and pepper to taste. Mash until smooth and creamy. Keep warm.

    Prepare the Carrots

    Preheat the oven to 400°F (200°C). Peel and cut the carrots into sticks. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until tender.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filet for about 4-5 minutes on each side for medium-rare, or longer to your desired doneness. Let rest for a few minutes.

    Plate the Dish

    On each plate, add a generous scoop of whipped potatoes, place the filet mignon on top, arrange the roasted carrots beside it, and drizzle with demi glaze. Garnish with fresh herbs.
