Method

Crust Preparation

1

Preheat the Oven

Preheat your oven to 350°F (175°C).

2

Mix Crust Ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix well until all ingredients are thoroughly combined and resemble wet sand.

3

Form the Crust

Press the mixture into the bottom of a 9-inch springform pan, making sure it is evenly distributed and firmly packed.

4

Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Filling Preparation

5

Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined.

6

Add Sour Cream and Vanilla

Mix in the sour cream and vanilla extract until fully incorporated.

7

Incorporate Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

8

Add Seasonal Fruit

Fold in the seasonal fruit gently, being careful not to break it down too much.

9

Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan.

10

Bake the Cheesecake

Bake in the oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour.

11

Chill the Cheesecake

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
