Pasta Preparation

Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine pasta and cook according to package instructions until al dente. Drain and set aside.

Grill the Chicken

Preheat a grill or grill pan over medium heat. Rub the chicken breasts with olive oil, salt, black pepper, and garlic powder. Grill the chicken for 6-7 minutes on each side until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest before slicing.

Roast the Cherry Tomatoes

Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the oven for about 15-20 minutes until soft and slightly caramelized.

Make the Cream Sauce

In a saucepan over medium heat, combine heavy cream, grated Parmesan cheese, lemon juice, and dried Italian herbs. Stir continuously until the cheese melts and the sauce thickens, about 5-7 minutes. Season with additional salt and pepper to taste.

In a large mixing bowl, combine the cooked linguine, roasted cherry tomatoes, baby spinach, and cream sauce. Toss gently until everything is well coated.

Plate the pasta mixture in bowls, top with sliced grilled chicken, and sprinkle with shaved Parmesan cheese. Garnish with fresh basil if desired.
