Mashing Process
1. Prepare the Mash
In a large mash tun, combine 70 cups of corn, 15 cups of rye, and 15 cups of barley malt. Mix thoroughly to create a homogenous grain mash.
2. Add Water
Heat 100 cups of water to approximately 165°F (74°C) and add it to the mash mixture. Stir well to ensure all grains are hydrated.
3. Let it Rest
Allow the mash to rest for 60 minutes at a temperature of about 150°F (65°C) to enable enzymatic conversion of starches to sugars.
Fermentation Process
4. Cool the Mash
After resting, cool the mash to approximately 80°F (27°C).
5. Add Yeast
Sprinkle 1 tablespoon of yeast over the cooled mash and stir gently to incorporate. Cover the mash and let it ferment for about 5 to 7 days.
Distillation Process
6. Distill the Wash
Once fermentation is complete, transfer the wash to a pot still for distillation. Heat gradually to separate the alcohol from the mash.
7. Collect the Distillate
Collect the distillate until you reach a desired proof, typically around 125 proof for bourbon.
Aging Process
8. Fill the Barrels
Fill 5 new charred oak barrels with the distillate. Ensure that the barrels are sealed tightly to prevent evaporation.
9. Age the Bourbon
Store the barrels in a controlled environment for a minimum of 2 years to develop the flavor profile of the bourbon.
