Roast Garlic

Preheat your oven to 190°C (375°F). Slice the tops off the garlic cloves to expose the individual cloves. Drizzle with olive oil and wrap them in aluminum foil. Roast in the oven for about 30-35 minutes until soft and caramelized.

Prepare Goat Cheese

In a small oven-safe dish, place the goat cheese. Once the garlic is roasted, squeeze the soft garlic cloves over the cheese. Drizzle with additional olive oil, and sprinkle with salt, pepper, and fresh thyme.

Bake Cheese

Place the dish in the oven and bake for about 15-20 minutes, or until the cheese is warm and slightly bubbly.

Make Crostini

While the cheese is baking, slice the baguette into thin slices. Brush both sides with olive oil and arrange on a baking sheet. Toast in the oven for about 10 minutes until golden and crisp.

Serve

Once the goat cheese is baked and the crostini are toasted, serve immediately. Spread the warm goat cheese on the crostini and enjoy!
