All-Purpose Farm Pantry Sauces (makes about 3 cups total, 4 sauces)
Method
Creamy Herb Sauce

In a medium bowl, combine 1 cup mayonnaise and 1/2 cup Greek yogurt until smooth.

Add 1 tablespoon fresh lemon juice, 1 minced garlic clove, 1/4 cup chopped parsley, 2 tablespoons chopped chives and 1 teaspoon thyme leaves. Stir to combine.

Season with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust acidity with another 1/2 tablespoon lemon juice or salt as needed.

Cover and refrigerate at least 30 minutes to let flavors meld. Keeps refrigerated up to 5 days.
Tangy Farm Ranch

In a bowl, whisk together 1/2 cup sour cream and 1/4 cup buttermilk until smooth.

Stir in 1 teaspoon dried dill, 1/2 teaspoon onion powder, 1/2 teaspoon Worcestershire sauce and 1/4 teaspoon salt. If you prefer a thinner ranch for dressing, add an extra 1-2 tablespoons of buttermilk.

Fold in 1/4 cup of the prepared Creamy Herb Sauce to add fresh-herb dimension (optional) or leave plain for a more classic flavor.

Refrigerate at least 20 minutes before serving. Keeps refrigerated up to 7 days.
Tomato-Honey Farm Sauce

In a small saucepan over low heat, combine 1/2 cup ketchup, 2 tablespoons honey, 1 tablespoon apple cider vinegar and 1/2 teaspoon smoked paprika.

Taste and adjust balance: add up to 1/2 tablespoon more vinegar for tang, or 1 teaspoon more honey for sweetness. Remove from heat and cool to room temperature.

Mustard-Herb Drizzle

In a small bowl whisk together 1/4 cup whole grain mustard and 2 tablespoons extra-virgin olive oil until slightly emulsified.

Stir in 1 teaspoon honey, 1 tablespoon finely chopped fresh tarragon or oregano, 1/4 teaspoon salt and 1/8 teaspoon black pepper.

Taste and adjust seasoning — add a splash more olive oil for a silkier drizzle or 1/2 teaspoon water to thin if needed.
