Cooking Instructions

1

Prepare the Balsamic Reduction

In a small saucepan, bring balsamic vinegar to a boil over medium heat. Reduce the heat and let it simmer until it thickens, about 10-15 minutes. Set aside to cool.

2

Prepare the Asparagus

Preheat a grill or grill pan over medium-high heat. Toss the asparagus with 1 tablespoon of olive oil, salt, and pepper. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from heat and set aside.

3

Make the Lemon Avocado Relish

In a bowl, combine the diced avocado, juice from the lemon, minced garlic, salt, and pepper to taste. Mix well and set aside.

4

Sear the Salmon

Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the skillet and sear for about 4-5 minutes. Flip and cook for another 3-4 minutes until the salmon is cooked through and has a nice crust.

5

Plate the Dish

On a plate, arrange the grilled asparagus, top with the seared salmon fillet, and spoon the lemon avocado relish over the salmon. Drizzle with the balsamic reduction before serving.
