Preparation Steps
Prepare the Pinto Beans
In a pot, heat the pinto beans over medium heat until warmed through. Season with salt to taste.
Cook the Pork Belly
In a skillet, cook the pork belly over medium heat until crispy and browned, about 5-7 minutes. Remove from skillet and set aside.
Sauté the Green Chiles
In the same skillet, add the green chiles and sauté for 2-3 minutes until softened.
Cook the Eggs
In a separate non-stick skillet, cook the eggs sunny side up until the whites are set but the yolks are still runny.
Assemble the Dish
On each tortilla, layer the warmed pinto beans, crispy pork belly, sautéed green chiles, and top with a sunny side up egg.
Serve
