Heat 5 gallons of water to 165°F (74°C) and add the crushed grains. Maintain the temperature for 60 minutes.

Mashing

After mashing, sparge the grains with 170°F (77°C) water until you collect about 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add 1 oz of Noble hops for bittering. Boil for 60 minutes, adding 0.5 oz of Noble hops for flavor in the last 15 minutes.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the Belgian yeast. Seal and ferment for 1-2 weeks at 68-72°F (20-22°C).

Fermentation

After fermentation is complete, dissolve 3 oz of priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap.

Bottling

Let the bottles condition at room temperature for 1-2 weeks, then refrigerate before serving.
