Prepare the Potatoes
Preheat your oven to 400°F (200°C). Toss the fingerling potatoes with olive oil, salt, and pepper. Place them on a baking sheet and roast for about 25-30 minutes, or until tender and golden brown.
Sear the Ribeye
While the potatoes are roasting, season the cowboy ribeye steak with salt and pepper. Heat a skillet over high heat and add a tablespoon of olive oil. Once hot, sear the ribeye for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Add butter during the last minute of cooking and baste the steak.
Cook the Broccolini
In a separate pot, bring salted water to a boil. Add the broccolini and blanch for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.
