Blue I'll Have Another - Cocktail
Prepare glass and garnish
Chill a Collins or highball glass in the freezer for 5–10 minutes. When ready to serve, fill the glass halfway with crushed ice. Thread 3–4 fresh blueberries on a cocktail pick or drop them into the bottom of the glass. Set aside.
Dry shake
If using egg white (or aquafaba), add 0.5 oz egg white to a cocktail shaker along with 2 oz vodka, 1 oz blue curaçao, 0.75 oz fresh lemon juice, 0.5 oz simple syrup and 0.5 oz elderflower liqueur (if using). Do a vigorous 'dry' shake (no ice) for 15–20 seconds to emulsify and create foam.
Wet shake
Add 1 cup of ice to the shaker. Seal and shake vigorously for 10–15 seconds until the shaker is very cold to the touch and the mixture is well chilled.
Strain and build
Double-strain the cocktail over the crushed ice in your prepared glass to remove ice shards and any solids. Top gently with 1.5 oz clear club soda to give the drink lift and sparkle. If using edible glitter, sprinkle 1/4 teaspoon very lightly on top of the foam or surface for a shimmering effect.
Finish and serve
Express a lemon twist over the drink (squeeze the oils over the surface), run it around the glass rim, and drop it in as garnish (or perch on the rim). Optionally garnish with a cocktail pick of blueberries. Serve immediately with a short straw so the drinker can enjoy the foamy top and sparkling body.
