Prepare glass
Chill a rocks glass by filling it with ice and setting it aside while you mix the drink.

Combine ingredients
In a cocktail shaker, add 0.75 oz dry curaçao, 1.5 oz dark rum, 0.5 oz fresh lime juice, 0.25 oz demerara syrup and 2 dashes of orange bitters.

Add ice and shake
Fill the shaker with ice (about 1 cup). Cap and shake vigorously for 10–15 seconds until the shaker is cold to the touch and the outside is frosty.

Prepare serving glass
Dump the ice from the chilled rocks glass. Place one large ice cube (or fresh ice) into the glass.

Strain and garnish
Double-strain the cocktail from the shaker into the prepared rocks glass over the large ice cube. Express the orange twist over the drink (pinch the peel to release oils), run it around the rim and drop it into the glass as garnish.

Serve
Serve immediately. Optionally provide a stirring pick so the drinker can taste as the ice dilutes.
