Season and rest
Pat the rockfish fillets dry with paper towels. In a small bowl combine kosher salt, black pepper, smoked paprika, and ground coriander. Rub both sides of each fillet with olive oil, then evenly season with the spice mixture. Let rest at room temperature for 10–15 minutes while other components are prepared.

Sear to form dark crust
Heat a heavy skillet (cast-iron preferred) over high heat until very hot. Add a light film of oil. Place fillets skin-side down and press gently for 10 seconds to ensure full skin contact. Sear without moving for 3–4 minutes until the skin is deeply browned and crisp. Flip and cook flesh-side for 1–2 minutes until fish is just cooked through (internal temp ~125–130°F / 52–54°C). Remove to a warm plate and tent loosely with foil.
Charred cabbage

Preheat broiler with oven rack about 6 inches from the element, or heat a large cast-iron pan over high heat if charring on stovetop. Brush cabbage wedges with olive oil and season with salt and pepper. If broiling, place on a sheet pan cut-side down and broil 6–8 minutes until the edges are blackened and the cut surface shows deep char; flip and broil an additional 2 minutes. If using a pan, place cabbage cut-side down and press for good contact, char 4–6 minutes until blackened edges form, then flip and cook 1–2 minutes. Remove and immediately drizzle with apple cider vinegar and honey; let rest 2–3 minutes so flavors meld.
Slow-roasted baby carrots

Preheat oven to 325°F (160°C). Toss baby carrots with melted butter, olive oil, honey or maple, thyme leaves, salt, and pepper in a roasting pan or rimmed baking sheet so they are in a single layer. Roast low and slow for 35–45 minutes, turning once halfway, until carrots are tender and lightly caramelized. For a deeper caramelization, finish at 400°F (200°C) for 5–7 minutes. Keep warm until plating.
Herbed wild rice

Rinse the wild rice blend under cold water briefly. In a medium saucepan, melt butter over medium heat. Add the minced shallot and sauté 2–3 minutes until translucent but not browned. Add garlic and cook 30 seconds. Add the rinsed rice and stir to coat with butter and aromatics for 1 minute. Add stock, bring to a boil, then reduce to a simmer, cover, and cook according to package instructions (usually 35–45 minutes) until grains are tender and split. If liquid is absorbed before rice is tender, add up to 1/2 cup more hot stock and continue cooking. When done, fluff with a fork and stir in chopped parsley, dill, lemon zest, salt, and pepper. Keep covered and warm.
Hollandaise espuma (aerated sauce)

Make classic hollandaise base
In a heatproof bowl set over barely simmering water (double boiler), whisk the egg yolks with lemon juice until slightly thickened (about 2–3 minutes). Remove from heat and very slowly drizzle in the warm melted butter while whisking constantly until the sauce emulsifies and thickens. Stir in salt and cayenne. If sauce is too thick, whisk in 1 tablespoon water or warm cream to adjust to a thinner, pourable consistency. Cool slightly.

Prepare and charge espuma
Once the hollandaise base is warm but not hot (keep under 140°F / 60°C), whisk in the heavy cream and (optional) lecithin powder to help stability. Strain the mixture through a fine sieve into a 1-cup or 0.5-L siphon ( espuma ) bottle. Charge with one N2O cartridge according to manufacturer instructions, shake vigorously 6–8 times, and refrigerate upright for 10–15 minutes to stabilize. If you do not have a siphon, you can whisk hollandaise until fluffy and transfer to a squeeze bottle or serve as a classic sauce; note texture will differ.

Before service, bring the siphon to room temperature in warm water for a minute, shake again, and test spray into a bowl to ensure smooth, airy texture. If the espuma separates, gently re-warm in a warm water bath and re-shake.
Finishing and plating

Divide herbed wild rice among four warm plates (about 3/4 cup each). Arrange 2–3 slow-roasted baby carrots beside the rice. Place a portion of charred cabbage wedge next to the carrots. Lay a dark-crusted rockfish fillet on top of or leaning against the rice so the crisp skin is visible. Shake the hollandaise espuma and dispense a light cloud of espuma over the fish (or spoon 2–3 tbs of classic hollandaise over fish).
