Prepare bacon

Heat a skillet over medium heat. Lay bacon slices in a single layer and cook until crisp, about 4–6 minutes per side depending on thickness. Transfer to a paper towel-lined plate to drain and keep warm. Reserve 1 tsp of the bacon fat in the skillet (optional) for extra flavor.

Caramelize onions

In the same skillet (add 1 tablespoon butter and 1 teaspoon olive oil if skillet is dry), add the thinly sliced onion over medium-low heat. Cook, stirring occasionally, until softened and richly golden, about 18–25 minutes. Season with a pinch of salt halfway through. When done, remove from heat and keep warm.

Form and season patties

Divide the ground beef into two equal portions (for two large patties). Gently shape each portion into a patty about 3/4-inch thick and slightly wider than the bread slices (they will shrink). Make a shallow thumb indent in the center of each patty to prevent doming. Season both sides evenly with salt and black pepper, then brush or rub 1/2 tablespoon Worcestershire sauce evenly over each patty.

Cook patties

Heat a heavy skillet or griddle over medium-high and add 1 tablespoon neutral oil. When shimmering, add the patties. Cook without moving until a deep brown crust forms, about 3–4 minutes. Flip and cook another 3 minutes for medium (adjust time for desired doneness). In the last 1–1.5 minutes of cooking, place 1 slice Havarti and 1 slice smoked Gouda on each patty. Cover the skillet briefly (30–60 seconds) or tent with foil to help the cheese melt. Remove patties to a plate and let rest 2 minutes.

Toast bread and assemble condiments

While patties rest, spread 1/2 teaspoon mayonnaise and 1/2 teaspoon Dijon mustard on each slice of bread (adjust proportions to taste). Heat a clean skillet or griddle over medium and add the 2 tablespoons butter. Toast the bread until golden on both sides, about 1–2 minutes per side. Alternatively, use a toaster and then butter the toasted slices.

Build The Sensation

Place one toasted bread slice mayo-side-up on a plate. Top with half of the caramelized onions, then one cheese-topped beef patty. Add two slices of crisp bacon (stacked or folded). Place the second toasted bread slice on top or, if serving open-faced, place another patty and repeat for a double. For a two-sandwich yield: split ingredients to make two identical sandwiches. Serve immediately while hot.
