Method
Waffles
Preheat
Preheat your waffle iron according to manufacturer instructions. If it has adjustable heat, set to medium-high. Lightly grease plates with a small amount of melted butter or nonstick spray.
Dry ingredients
In a large bowl whisk together the all-purpose flour (2 cups), granulated sugar (2 tbsp), baking powder (1 tsp) and salt (1 tsp) until evenly combined.
Combine batter
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few small lumps are fine. Let the batter rest 5 minutes while the waffle iron finishes heating.
Cook waffles
Pour the recommended portion of batter into the preheated waffle iron (typically 1/2 to 3/4 cup per waffle depending on iron). Close and cook until waffles are golden brown and crisp, about 3–5 minutes per waffle. Transfer finished waffles to a wire rack in a warm oven (200°F / 95°C) to keep crisp while you finish the rest.

Warm marshmallow fluff
Spoon marshmallow fluff (1 cup) into a microwave-safe bowl and warm in 10–15 second increments, stirring between intervals, until it is soft and spreadable but not boiling (about 20–30 seconds total depending on microwave). Alternatively, warm gently in a small saucepan over low heat, stirring often.
Assemble waffles
Place two hot waffles on each plate. Immediately spread ~1/2 cup of the warmed marshmallow fluff evenly over the top waffle so it slightly melts into the waffle surface. Sprinkle 1/2 cup of semisweet chocolate chips over the marshmallow layer.
Torch or oven finish
Option A (kitchen blowtorch): Lightly torch the marshmallow fluff and chocolate chips until the marshmallow shows a golden brown crust and the chips begin to soften (keep torch moving to avoid burning), about 20–40 seconds. Option B (broiler): Place the assembled waffles on a baking sheet and position under a hot broiler 4–6 inches from heat. Broil 30–60 seconds while watching closely until marshmallow is lightly browned and chocolate is beginning to melt. Remove promptly to avoid burning.
Optional mini marshmallows
If using mini marshmallows (1/2 cup), sprinkle them over the chocolate chips before torching/broiling for an extra toasted texture.
Optional Sides & Meat
Prepare selected side and meat per preference: reheat cooked bacon or sausage in a skillet over medium heat until hot and crisp (2–4 minutes), or serve fresh berries and warmed maple syrup on the side. Plate two waffles topped with the toasted s'mores mixture alongside the chosen side and meat.
