Bagels
Prep dough (if using store-bought bagels, skip to Boil & Bake)
If making bagels from scratch, prepare dough and shape into 4 bagels according to your preferred recipe. Allow to rest and rise as directed by that recipe. This step is optional if using purchased boiled-and-baked bagels.
Preheat oven and prepare water
Preheat the oven to 425°F (220°C). In a large pot, bring 8 cups of water to a gentle boil and stir in 1 tablespoon barley malt syrup or honey — this adds color and shine to the crust.
Boil the bagels
Once the water is boiling, reduce to a simmer. Carefully lower bagels (up to 4 at a time) into the water. Boil 45 seconds on one side, then flip and boil 45 seconds on the other side for a slightly chewy interior and glossy crust. Increase to 60 seconds per side if you want a denser chew.
Bake the bagels
Remove bagels with a slotted spoon and place on a parchment-lined baking sheet. If using, brush each bagel lightly with egg wash for extra sheen. Bake in the preheated oven for 15–20 minutes, rotating halfway, until golden brown. Remove and cool on a rack until warm or room temperature (about 15 minutes).

Prepare cream cheese
Place 8 oz softened cream cheese in a small bowl. Stir in 2 teaspoons finely chopped fresh dill (optional) and a few grinds of black pepper. Taste and adjust seasoning. Transfer to a serving bowl or keep in the refrigerator until assembly.
Slice red onion
Peel and slice 1 red onion very thinly into rings or half-rings. If you prefer a milder bite, place the slices in cold water for 10 minutes, then drain and pat dry.
Prepare capers and lox
Drain capers well. Arrange 12 oz of thinly sliced cured lox on a platter, separating slices so they are easy to lift when assembling the bagels.
Assembly & Serving
Split and toast (optional)
Carefully slice each baked bagel in half horizontally. If desired, lightly toast cut sides until just golden.
Spread cream cheese
Generously spread about 2 tablespoons (adjust to taste) of the seasoned cream cheese on the bottom half of each bagel. If using butter, spread a thin layer on the top half for added richness.
Layer lox and toppings
Top the cream cheese with 3 ounces of cured lox per bagel (approximately a few overlapping slices). Distribute thin red onion slices evenly over the lox (about 2–3 rings per bagel) and sprinkle about 1/2 tablespoon capers per bagel. Add an extra grind of black pepper to each bagel and a small pinch of chopped dill if desired.
Finish and serve
Place the top half of the bagel over the toppings. Serve immediately with lemon wedges on the side for squeezing over the lox. Leftover components (cream cheese, lox, sliced bagels) can be stored separately: bagels in an airtight bag, cream cheese refrigerated, lox refrigerated and consumed within 2–3 days.
