1. Prepare glass

Chill a coupe or martini glass by filling it with ice and water or by placing it in the freezer for a few minutes. Set aside.

2. Combine ingredients

In a cocktail shaker, add the gin, creme de violette, fresh lemon juice, maraschino liqueur, simple syrup, and the egg white.

3. Dry shake

Without ice, seal the shaker and shake vigorously for 15–20 seconds. This 'dry shake' emulisfies the egg white and creates a frothy texture.

4. Wet shake

Open the shaker, add the ice, reseal, and shake vigorously for another 12–15 seconds until the shaker is cold to the touch and well chilled.

5. Strain

Discard the ice and water from the chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine-mesh strainer (or fine sieve) to remove ice shards and ensure a silky foam.

6. Garnish and serve

Express a lemon twist over the surface to release oils, then run it around the rim and drop it onto the foam as garnish. Serve immediately.

7. Notes

If you prefer not to use raw egg white, substitute 0.5 oz (15 ml) aquafaba (chickpea brine) and adjust the dry shake time as needed. Adjust the creme de violette quantity to taste: more will deepen the violet color and floral notes; less will keep the cocktail subtler.
