Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon. In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Add Mix-Ins
Fold in your choice of add-ins such as blueberries, chocolate chips, peanut butter, chopped pecans, or cinnamon raisins into the batter.
Preheat Waffle Iron
Preheat your waffle iron according to the manufacturer’s instructions.
Cook the Waffles
Pour the batter into the preheated waffle iron, using about 1/2 to 3/4 cup of batter for each waffle. Close the lid and cook until the waffles are golden brown and crisp, usually about 5 minutes.
Serve
Carefully remove the waffles from the iron, and serve warm with toppings of your choice such as syrup, whipped cream, or more fruit.
