Crust Preparation
Make the Tartlet Crust
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold unsalted butter, cut into small pieces.
Mix Ingredients
Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
Chill Dough
Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Filling Preparation
Prepare the Filling
In a medium bowl, combine the chopped pecans, light corn syrup, brown sugar, melted unsalted butter, large eggs, vanilla extract, and salt. Mix until well combined.
Assembly and Baking
Preheat the Oven
Preheat your oven to 350°F (175°C).
Roll Out the Dough
Once chilled, roll out the dough on a floured surface to about 1/8 inch thick.
Cut and Shape the Crusts
Cut out circles of dough to fit into your tartlet pans. Gently press the dough into the pans.
Fill the Tartlets
Spoon the pecan filling into each tartlet shell, filling them about 3/4 full.
Bake
Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is lightly golden.
Cool and Serve
Remove from the oven and let cool for 10 minutes before serving. Enjoy your Pecan Pie Tartlets!
