Method
Preparation of Wagyu Fat Wash
Render the Wagyu Fat
In a small saucepan, gently heat the wagyu beef fat over low heat until it melts completely, about 10-15 minutes. Do not let it boil.
Combine with Bourbon
Once the fat is fully melted, remove it from heat and let it cool slightly. Pour the melted fat into a container with the SPH Knob Bourbon, and stir gently to combine. Cover the container and let it sit at room temperature for at least 24 hours.
Strain the Mixture
After 24 hours, place a fine-mesh strainer or cheesecloth over another container. Pour the fat and bourbon mixture through the strainer to separate the fat from the liquid. Discard the solid fat, keeping the fat-washed bourbon.
Honey Syrup Preparation
Make the Honey Syrup
In a small saucepan, combine equal parts honey and water. Heat over low heat, stirring until the honey is fully dissolved. Allow the syrup to cool and store in a sealed container in the refrigerator.
Final Mixing
Strain and Serve
Strain the mixture into a chilled cocktail glass. Optionally, garnish with a twist of orange peel or a walnut for added aroma and decoration.
