    Preheat and prepare

    Preheat a small Belgian or mini-waffle iron (or standard waffle iron if making larger bites) until hot. Lightly brush or spray the grids with melted butter or neutral oil to prevent sticking.

    In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

    In a separate bowl, beat the large egg lightly. Stir in whole milk, buttermilk, melted butter, and vanilla extract until smooth.

    Pour the wet ingredients into the dry ingredients and fold gently until just combined. Do not overmix—the batter should be slightly lumpy. Let the batter rest 5 minutes while preparing the berries.

Blueberry Filling & Berry Mix

    Reserve about 3 tablespoons of whole fresh blueberries to use as the stuffing for the waffle bites.

    Place the remaining mixed berries (about 1 cup) in a small bowl. Add 2 teaspoons granulated sugar, 1 teaspoon fresh lemon juice, and 1/2 teaspoon lemon zest (if using). Gently toss to combine and let sit for 5–10 minutes to macerate—this will release juices and infuse the berries with sweetness.

    If any berries are large (strawberries), slice into smaller pieces so the mix is bite-sized and will pair well with the waffle bites.

Cook Waffle Bites

    Spoon or pipe about 1 to 1 1/2 tablespoons of batter into each mini-well of the preheated waffle iron (adjust quantity for your iron size).

    Place 2–3 of the reserved fresh blueberries in the center of the batter for each waffle bite. If using a bigger iron, place a small cluster (3–4) in the center of each portion. Do not press blueberries into batter—just nestle them lightly.

    Top with another 1 tablespoon of batter to barely cover the berries (enough to enclose them). Close the iron and cook until the waffles are golden brown and crisp at the edges, about 2–4 minutes depending on your iron. Cook in batches until all batter is used.

    Transfer cooked waffle bites to a wire rack set over a baking sheet to keep crisp while finishing the rest.

Nutella Drizzle & Finish

    Place the Nutella in a microwave-safe bowl with 1 tablespoon milk or cream. Microwave in 10–15 second intervals, stirring between each, until the Nutella is pourable but not too thin (about 20–30 seconds total depending on your microwave). Alternatively, warm gently in a small saucepan over low heat, stirring constantly and adding a splash of milk if needed to reach a drizzle consistency.

    Arrange waffle bites on a serving platter. Spoon or drizzle warm Nutella over the waffle bites using a spoon or a small piping bag for a neater drizzle.

    Spoon the macerated berry mixture over or alongside the waffle bites so each bite can be topped with some sugared berries. If desired, dust lightly with powdered sugar.
