    Make the cheese mixture

    In a medium bowl, combine ricotta, grated mozzarella, crumbled goat cheese, and Parmesan. Add 1 whole egg, 1/2 tsp fine sea salt and 1/4 tsp freshly ground black pepper. Stir until evenly incorporated; mixture should be sticky but hold shape. Taste and adjust seasoning if needed.

    Portion the bombs

    Using a small scoop or tablespoon, portion the cheese mixture into 12 equal balls (about 1 to 1.25 tablespoons each). Place formed balls on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up — this helps them hold shape during breading and frying.

    Prepare coating stations

    Set up three shallow bowls: one with the 3/4 cup flour seasoned with a pinch of salt, one with 2 eggs whisked with 2 tablespoons cold water (egg wash), and one with breadcrumbs mixed with 1/4 cup fine cornmeal (if using) for extra crunch. For an extra-durable coating, you can double-dip: flour → egg → breadcrumbs → egg → breadcrumbs.

    Coat the chilled cheese balls

    Working with chilled balls, dredge each ball in flour (shake off excess), dip into egg wash, then roll in breadcrumbs to fully coat. If desired for extra protection, return to egg wash and a second coat of breadcrumbs. Place coated balls on a tray and chill for 15 minutes to set the coating. Keep refrigerated until ready to fry.

Frying

    Pour neutral oil into a heavy-bottomed pot or deep skillet to a depth of about 1.5–2 inches (roughly 1 cup for a small pot). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb in — it should sizzle immediately and brown in ~45–60 seconds.

    Fry the cheese bombs in small batches (3–4 at a time, depending on pot size) to avoid overcrowding. Gently lower coated balls into hot oil using a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning occasionally, until golden brown and crisp on all sides. Keep an eye on color — overfrying will brown too quickly before the centers warm through.

    Using a slotted spoon, transfer fried bombs to a paper towel–lined rack or plate to drain. Sprinkle lightly with flaky sea salt while still hot. Keep warm in a low oven (200°F/95°C) on a baking sheet while you finish remaining batches.

Peppadew Relish

    Combine chopped peppadews, minced red onion, chopped parsley, 1 tablespoon red wine vinegar, 1 teaspoon olive oil, 1/2 teaspoon honey (optional), 1/8 tsp salt and a pinch of black pepper in a small bowl. Stir to combine and let sit at room temperature for 10–15 minutes to meld flavors. Taste and adjust vinegar or honey to balance sweet/tart. Keep refrigerated if making ahead.

Sweet Fig Sauce

    In a small saucepan, combine chopped dried figs and 1/2 cup water. Bring to a gentle simmer over medium heat, then reduce heat to low and simmer 6–8 minutes until figs are softened and liquid reduces slightly.

    Add 1 tablespoon brown sugar, 1 teaspoon balsamic vinegar and 1 teaspoon lemon juice. Continue to simmer 2–3 minutes. If you prefer a smooth sauce, carefully transfer the mixture to a blender or use an immersion blender and puree until smooth. For a chunkier relish-like sauce, mash lightly with a fork.

    Return sauce to the pan and stir in 1/2 tablespoon butter (optional) and a pinch (1/16 tsp) of salt. Warm through, then remove from heat and let cool slightly; sauce will thicken as it cools. Keep warm or reheat gently before serving.

Assembly & Garnish

    Arrange warm fried cheese bombs on a serving platter. Spoon a small dollop (about 1 teaspoon) of peppadew relish onto each bomb, then drizzle or spoon a thin streak of sweet fig sauce alongside or over each bomb (about 1 teaspoon each).

    Finish with a few microgreens or chopped basil per bomb and a light sprinkle of flaky sea salt. Serve immediately while the centers are warm and gooey.
