Method
Prepare Chicken & Marinade
Trim and cube
Pat the chicken breasts dry with paper towels. Trim any visible fat or connective tissue and cut into 1 to 1 1/4-inch cubes for even cooking (about 24–28 pieces from 1 lb).
Make marinade
In a medium bowl, whisk together the Greek yogurt, 1 tablespoon lemon juice, 1 tablespoon olive oil, minced garlic (use a press or finely mince), 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth.
Marinate
Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour (minimum 30 minutes to lightly tenderize; up to 2 hours is fine). If short on time, 15 minutes still helps adhesion of crust.
Prepare Pistachio Crust
Toast and chop pistachios
Preheat the oven broiler or a dry skillet over medium heat. If using the skillet, toast the pistachios for 2–3 minutes, stirring, until fragrant — do not burn. Let cool slightly, then pulse in a food processor in 2–3 short bursts until you have mostly coarse crumbs with a few small pieces (fine sand consistency is not desired). Measure out 1 cup after processing.
Mix crust
In a shallow bowl or rimmed plate, combine the crushed pistachios, 1/2 cup panko breadcrumbs, 1/4 cup grated Parmigiano-Reggiano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to distribute evenly.
Assemble Skewers & Crust
Preheat broiler and prepare pan
Position an oven rack about 6 inches from the broiler element and preheat the broiler to high. Line a rimmed baking sheet with foil and lightly oil the foil or use a wire rack set over the sheet to allow airflow. If using wooden skewers, soak them in water for 20–30 minutes beforehand to prevent burning.
Skewer the chicken
Thread 3–4 chicken cubes onto each skewer, leaving a little space between pieces for even heat circulation. You should get about 6–8 skewers depending on piece size.
Dredge in crust
Lightly brush or pat any excess marinade off the chicken (a dry-ish surface helps adhesion). Press each chicken piece into the pistachio mixture, turning to coat all sides and press the crust into the meat so it adheres. Place skewers on the prepared sheet or rack with the crusted side up. Lightly brush the crust with 1 teaspoon neutral oil to help browning under the broiler.
Broil & Make Glaze
Broil the skewers
Broil the skewers 4–6 minutes on the first side until the crust is golden and beginning to brown. Carefully flip the skewers using tongs and broil an additional 3–5 minutes, until the internal temperature of the chicken reaches 165°F (74°C) and the pistachio crust is golden but not burned. Total broiling time will vary by broiler strength and distance from the element.
Prepare honey–Marsala glaze
While the skewers broil, make the glaze: in a small saucepan over medium heat, add 1/4 cup Marsala wine and simmer for 1–2 minutes to reduce slightly. Whisk in 2 tablespoons honey and 1 tablespoon unsalted butter, stirring until the glaze is smooth and slightly thickened (about 1 minute). Remove from heat and stir in 1/2 tablespoon lemon juice and 1/8 teaspoon salt. Keep warm.
Glaze the skewers
Once chicken reaches temperature, transfer skewers to a clean sheet or platter. Brush the honey–Marsala glaze lightly over the pistachio crust on each skewer, covering evenly. If desired, place the glazed skewers back under the broiler for 20–30 seconds just to set the glaze and create a slight sheen — watch carefully to avoid burning the honey.
Finish & Serve
Transfer skewers to a serving platter, sprinkle with chopped fresh parsley for color, and serve immediately. Optional: serve with lemon wedges on the side for extra brightness. Leftovers keep refrigerated in an airtight container for up to 2 days; reheat gently in a 300°F (150°C) oven until warm to preserve crust texture.
