Wine Preparation & Chilling

1. Chill bottle

If the bottle is not already chilled, place the bottle in the refrigerator for 2–3 hours or in an ice bucket filled with equal parts ice and water for 20–30 minutes until it reaches 45–50°F (7–10°C). Adjust chilling time to personal preference; Sauvignon Blanc is best served well chilled but not ice cold.

2. Inspect bottle

Check the bottle for any sediment, damage to the cork, or off-odors before opening. Because this is a 2017 vintage, look for a firm cork and minimal sediment—Sauvignon Blancs typically have little sediment.

Opening & Pouring

3. Open the bottle

Using a clean corkscrew, cut and remove the foil, then insert the screw into the center of the cork and pull steadily to remove it. Wipe the bottle lip with a clean napkin if necessary.

4. Decanting (optional)

For a 2017 Sauvignon Blanc, decanting is usually unnecessary. If you prefer to open up aromas, pour gently into a decanter for 5–10 minutes and then serve.

5. Pouring

Pour about 4–6 ounces (120–180 ml) into each white wine glass, filling to the widest part of the glass to allow aromas to concentrate. For a 750 ml bottle, expect 4–6 servings depending on pour size.

Garnish & Pairing (optional)

6. Add lemon zest or herb

If desired, twist a piece of lemon zest over each glass to release oils and drop it in, or place one fresh herb leaf on the surface to complement the wine’s herbal notes. Keep garnishes minimal so they don’t overpower the wine.

7. Prepare cheese board

Arrange small portions of chèvre, mild brie, and a firm goat cheese on a small plate with crackers or baguette slices. Place the board near the wine so guests can taste pairings between sips.

8. Taste assessment

Encourage tasting the wine by observing color (pale straw to light gold for a 2017), swirling gently to release aromas, sniffing for herbaceous, citrus, or tropical notes, then taking a small sip to note acidity, body, and finish.

9. Re-cork and store

If not finished, reinsert the cork (cork-side down if using the original cork) or use a wine stopper and refrigerate upright. Consume remaining wine within 3–5 days for best freshness; high-acid whites like Sauvignon Blanc typically keep well for a few days when chilled.
