Chill glass and ingredients
Chill a champagne flute in the refrigerator for at least 10 minutes or fill it with ice and cold water for 2β3 minutes, then discard the ice/water. Make sure the sparkling wine and Chambord are well chilled.
Add liqueur
Pour 0.5 oz Chambord into the bottom of the chilled flute. Using a jigger will ensure accuracy.
Top with sparkling wine
Slowly pour 4 oz (about 120 ml) chilled Vouvray sparkler into the flute over the back of a spoon or gently down the side to preserve carbonation. Pour steadily until nearly full, leaving a small gap at the top to prevent overflow.
Garnish and finish
Drop 1β2 fresh raspberries into the drink. Optionally express a lemon twist over the surface to release oils, run it around the rim, and drop it in or discard. Serve immediately while bubbly.
