1. Chill glass

Place a coupe or champagne flute in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to chill.

2. Combine ingredients

In a cocktail shaker, add 1.5 oz Bombay Sapphire gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and a handful of ice (about 1 cup).

3. Shake

Secure the shaker and shake vigorously for about 10–12 seconds, until the exterior of the shaker feels cold and slightly frosted.

4. Strain

Discard ice or water from the chilled glass. Double-strain the shaken mixture (using a Hawthorne strainer and a fine mesh strainer if available) into the chilled coupe or flute, filling it about halfway.

5. Top with sparkling wine

Carefully top the cocktail with approximately 3 oz Brut sparkling wine. Pour slowly down the side of the glass to preserve bubbles and avoid excessive foam.

6. Garnish and serve

Express the oils of a lemon twist over the surface by holding the twist over the glass and giving it a quick snap, then drop it into the drink and serve immediately.
