Preheat and prepare
Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish (or similar capacity) with butter or cooking spray.
Cook sweet potatoes
Place the peeled and chunked sweet potatoes into a large pot and add enough cold water to cover by about 1 inch. Bring to a boil over high heat, then reduce to a simmer and cook until very tender when pierced with a fork, about 15–20 minutes depending on chunk size.
Drain and mash
Drain the sweet potatoes thoroughly and return them to the hot pot for a minute to evaporate excess moisture. Mash with a potato masher or pass through a ricer until smooth (aim for about 3 cups mashed).
Mix filling
While the potatoes are still warm, add 4 tablespoons unsalted butter and mash until incorporated. Stir in 1 cup granulated sugar, 1 large beaten egg, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon salt, and 1/4 cup milk or cream. Mix until the filling is smooth and evenly combined. Taste and adjust salt or spices as desired.
Transfer to dish
Spread the sweet potato mixture into the prepared baking dish in an even layer, smoothing the top with a spatula.
Pecan Streusel Topping
Combine dry ingredients
In a medium bowl, whisk together 3/4 cup all-purpose flour, 1/2 cup packed light brown sugar, 1/2 teaspoon ground cinnamon, and 1/8 teaspoon salt until evenly mixed.
Cut in butter
Add 6 tablespoons cold diced unsalted butter to the dry mixture. Use a pastry cutter, two forks, or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter remaining.
Add pecans
Fold in 1 cup chopped pecans until distributed throughout the streusel.
Top casserole
Evenly sprinkle the pecan streusel over the sweet potato layer, gently pressing so it adheres in places but remains crumbly on top.
Bake
Bake the assembled casserole in the preheated 375°F (190°C) oven until the topping is golden brown and the filling is heated through, about 25–30 minutes. If the topping browns too quickly, tent loosely with foil for the last 5–10 minutes.
Rest and serve
Remove from the oven and let the casserole rest for 10 minutes before serving. This allows the filling to set slightly and makes serving neater.
