Prepare sausage

Trim and score

Remove the smoked sausage from packaging. Pat dry with paper towels. If using long links, cut into 4–6 pieces (about 3–4 inches each). Lightly score the casings on the diagonal 3–4 times per piece — shallow cuts to allow heat and glaze to penetrate without causing the sausage to fall apart.

Season

Place the sausage pieces in a bowl. Drizzle with 1 tablespoon olive oil and toss to coat. Sprinkle garlic powder, onion powder, smoked paprika, black pepper, and kosher salt evenly over the links and toss until they are coated.

Cook (stovetop + oven or grill)

Preheat oven to 375°F (190°C). Heat a large oven-safe skillet (cast iron recommended) over medium-high heat until hot. Add the sausage pieces to the dry or lightly oiled pan in a single layer and cook 2–3 minutes per side, rotating until each side is browned and the casing has a nice sear. Transfer the skillet to the preheated oven and roast 8–10 minutes until heated through (internal temperature ~160°F/71°C) and the inside is hot and juicy.

Alternative — Grill

Preheat grill to medium (about 350–400°F/175–200°C). Place sausage directly on the grill grates and cook 6–8 minutes, turning every 2–3 minutes until browned and heated through. Move to a cooler part of the grill if flare-ups occur.

Alternative — Stovetop only

If not using oven or grill, continue cooking on medium heat 8–10 minutes more, turning frequently and covering for short periods to ensure even heat without bursting the casings.

Optional glaze

Make glaze

While sausage finishes cooking, combine brown sugar, Dijon mustard, apple cider vinegar, and hot sauce (if using) in a small bowl and stir until smooth. Taste and adjust sweet/tangy balance as desired.

Glaze the sausage

During the last 2–3 minutes of cooking (on the stovetop, oven, or grill), brush the glaze over the sausage pieces. Return to heat and cook until the glaze is tacky and caramelized, about 1–2 minutes per side. Be careful not to burn the sugar.

Finish and serve

Remove sausages from heat and transfer to a serving platter. Sprinkle chopped parsley over the top. Serve with lemon wedges to squeeze over (if using) or with crusty rolls on the side. Let rest 2–3 minutes before serving so juices redistribute.
