Preparation
Trim and dry
Pat the chicken quarters dry with paper towels. Trim any excess fat or loose skin. Place on a tray skin side up.
Season with salt & pepper
Evenly sprinkle the kosher salt (2 tbs) across all pieces—about 1/2 tablespoon per quarter—then grind the black pepper over the chicken. Let rest 15 minutes at room temperature or refrigerate up to 2 hours uncovered for slightly firmer skin.
Make the dry rub & apply
In a small bowl combine paprika, brown sugar, garlic powder, onion powder, dried oregano, ground cumin, and cayenne. Whisk together until uniform.
Whisk together the olive oil and apple cider vinegar in a separate small bowl to create a binder. Brush or rub about 1/2 tablespoon of the oil mixture over the skin of each quarter (use remaining binder as needed).
Generously rub the dry spice mix over all sides of the chicken quarters, pressing lightly so the rub adheres to the oil-coated skin and areas under the skin where possible. Set chicken on a rack for 10 minutes to allow the rub to tack.
Prepare smoker
Soak wood chips for 20–30 minutes if using chips; for chunks use them dry. Add wood to your smoker’s firebox or chip tray according to manufacturer instructions to produce a steady mild smoke (hickory for a stronger flavor, apple or cherry for milder, fruitier notes).
Smoking
Place the chicken quarters skin side up on the smoker grate, leaving small gaps between pieces for even smoke circulation. Insert a probe thermometer into the thickest part of one thigh, not touching bone.
Smoke at 250°F (120°C) until the internal temperature reaches 155–160°F (68–71°C), about 1 hour 30 minutes to 2 hours (timing varies by size of quarters and smoker consistency). Every 30 minutes beginning after the first 45 minutes, lightly spritz or mop the chicken with the apple juice to keep surfaces moist and encourage smoke adhesion.
If skin is getting too dark before the chicken reaches temperature, loosely tent with foil to prevent excessive color while allowing the meat to continue cooking.
Finish & rest
Once the internal temperature reaches 165°F (74°C) at the thickest part of the thigh (or 160°F followed by a 5–10 minute rest to reach 165°F carryover), remove the chicken from the smoker.
Transfer to a clean tray and loosely tent with foil. Let rest 10–15 minutes to allow juices to redistribute and for carryover cooking to finish. The final internal temperature should be 165°F (74°C).
Optionally, for crisper skin, after resting place the quarters skin-side down on a hot grill or under a broiler for 2–3 minutes watching carefully until skin crisps.
Serve warm. Spoon any juices from the resting tray over the chicken or serve alongside your preferred sides.
