Turkey & Brine
Prepare brine: In a large pot, combine 12 cups water, kosher salt, 2 tbsp brown sugar, bay leaves, peppercorns and crushed garlic. Bring to a simmer just to dissolve salt and sugar, then remove from heat. Cool to room temperature, then refrigerate until cold (about 30–45 minutes). Add 4 cups of ice to chill quickly.
Brine turkey: Place the turkey breast in a container or large resealable bag. Pour the cooled brine over the turkey making sure it is fully submerged. Refrigerate 6–8 hours (no more than 12 hours) to keep meat moist and mildly seasoned.
Remove and dry: After brining, remove the turkey from the brine, discard brine, and pat the turkey thoroughly dry with paper towels. Allow to air-dry uncovered in the refrigerator for at least 1 hour if time allows — this helps the rub adhere and promotes a better bark.
Cajun Dry Rub
Make the rub: In a small bowl combine smoked paprika, sweet paprika, cayenne, dried oregano, dried thyme, onion powder, garlic powder, ground black pepper, 1 tsp kosher salt and 1 tsp brown sugar. Stir until evenly mixed.
Seasoning
Coat the turkey: Rub 2 tsp olive oil evenly over the turkey breast to help the rub stick. Generously apply the Cajun dry rub all over the turkey, pressing gently so it forms an even layer. Be sure to get into any crevices and under the skin where possible for deeper flavor.
Smoking
Smoke the turkey: Place the rubbed turkey breast skin-side up on the smoker grate. Insert a probe thermometer into the thickest part of the breast, avoiding bone. Close the lid and smoke until internal temperature reaches 150°F–155°F (about 2.5–4 hours depending on breast size and smoker consistency). Monitor smoker to maintain 225°F; add wood as needed.
Finish & Serving
Serve: Serve warm or room temperature. Leftovers keep well refrigerated for 3–4 days and are excellent for sandwiches.
