Method
Pulled Pork
Season and sear
Pat the pork shoulder dry. Mix kosher salt, black pepper, garlic powder, onion powder, and smoked paprika and rub evenly over the pork. In a large Dutch oven or heavy skillet over medium-high heat, add 1 tablespoon oil and sear the pork on all sides until browned, about 3–4 minutes per side.
Braise
Add apple cider vinegar and stock to the pot, scraping up browned bits. Cover and transfer to a 300°F (150°C) oven or reduce heat to low on the stovetop. Cook until fork-tender, about 3–4 hours (internal temp ~195–205°F). Alternatively, cook in a slow cooker on low 8 hours.
Southern Sweet Sauce
Combine ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, hot sauce, smoked paprika, minced garlic and salt in a small saucepan over medium heat. Bring to a simmer, reduce heat to low and cook gently 8–10 minutes, stirring occasionally, until slightly thickened. Taste and adjust salt or sweetness. Cool slightly before using or refrigerate up to 1 week.
Queso
Pickles & Onions (quick prep)
Combine apple cider vinegar, water, sugar and salt in a jar or bowl. Add thinly sliced red onion, press under liquid and let sit at least 15 minutes (longer for sweeter pickled flavor). Drain before using. Thinly slice pickles if needed and set aside.
Assembly & Serve
Preheat oven to 375°F (190°C) if you prefer melted cheese and warmed chips. On a large oven-safe platter or baking sheet, arrange half of the tortilla chips in an even layer.
Scatter half of the pulled pork over the chips, spoon about half of the warm queso across evenly, then drizzle 1/3 of the Southern Sweet sauce over the pork. Add a second layer of chips and repeat with remaining pulled pork, queso and sauce for a stacked nacho build.
Serve each portion with two small sides (choice of hushpuppies or cornbread). Spoon additional Southern Sweet sauce on the side and offer sour cream. Total: place 3 hushpuppies or 2–3 small cornbread pieces per order so each plate gets two small sides as described.
