Preparation
Wash and prepare apples
Wash 2 lbs of apples thoroughly under running water to remove wax, dirt and pesticides. If desired, use a produce brush. Core the apples and cut them into quarters. Peeling is optional — leaving the peel adds nutrients and flavor but can increase cloudiness. Remove any bruised or browned parts.
Prepare lemon
Roll the lemon on the counter to soften, then cut in half. Reserve one half for juicing and the other for optional garnish. The lemon juice prevents oxidation and brightens flavor.
Juicing / Blending
If using a juicer
Feed the apple quarters through a cold-press or centrifugal juicer according to the manufacturer's instructions. Collect the juice in a container. Stop once all apple pieces are processed.
If using a blender (no juicer)
Place apple quarters in the blender with 1/2 cup of cold water to help puree. Blend on high until a smooth pulp forms (30–60 seconds).
Extract juice from pulp (blender method)
Line a fine-mesh sieve or cheesecloth over a large bowl or pitcher. Pour the apple puree into the sieve/cheesecloth and press or squeeze to extract as much juice as possible. You can press with the back of a spoon if using a sieve, or twist/squeeze if using cheesecloth. Collect the strained juice.
Finish & Adjust
Add lemon and sweetener
Add the juice of half a lemon (about 1 tablespoon) to the freshly extracted apple juice to prevent browning and add brightness. Taste the juice. If you prefer sweeter juice, stir in up to 1 tablespoon sugar or honey until dissolved. If the juice is too concentrated, add cold water a few tablespoons at a time (up to 1 cup) to reach desired strength.
Season (optional)
If desired, add a tiny pinch (about 1/8–1/4 tsp) of salt to enhance flavor. Stir well.
Chill and serve
Refrigerate the juice for at least 30 minutes to chill and let flavors meld, or serve immediately over ice. Give the juice a quick stir before pouring, as natural pulp may settle.
Storage
Transfer leftover juice to an airtight container or glass bottle and refrigerate. Fresh apple juice is best consumed within 48–72 hours. Shake or stir before serving, as separation and settling are normal.
