Prepare glass and mint

Place 8–10 fresh mint leaves in a Collins or highball glass. Reserve one small sprig for garnish.

Muddle

Add the lime juice and simple syrup to the glass with the mint. Using a muddler (or the back of a wooden spoon), gently press and twist the mint leaves 6–8 times to release oils and aroma. Avoid over-muddling to prevent bitter green flavors.

Add rum and ice

Pour 2 oz Peg Leg rum into the glass. Fill the glass with crushed ice to the top (about 1 cup crushed ice).

Stir

Use a bar spoon to gently stir the mixture 6–8 times to combine the rum, muddled mint, lime and syrup with the ice.

Top with soda

Carefully top the drink with about 2 oz chilled club soda, pouring slowly to keep effervescence.

Garnish and serve

Gently slap the reserved mint sprig between your palms to wake the aroma and place it on top of the drink along with a lime wedge or wheel on the rim. Serve with a straw and enjoy.
