Place the serving glass in the freezer or fill with ice water to chill while you prepare other components (5–10 minutes).

If using orange juice, pick a fresh orange and juice 1–2 teaspoons worth (0.5 oz) and lightly strain to remove pulp for a bright finish.

In a small bowl or measuring cup, vigorously whisk 2 oz softened vanilla ice cream with 1 tablespoon heavy cream until smooth and slightly loose — you want a pourable cream that will float lightly on the beer. This step is optional; it produces a richer, more dessert-like presentation.

Whisk ice cream and cream

Remove the chilled glass from the freezer and, if you prefer a cold but not overly diluted drink, add 3–4 ice cubes to the glass. For true beer-style service, skip the ice and use a fresh, chilled tulip or pint glass.

Add 0.5 oz fresh orange juice and 0.25 oz simple syrup to the bottom of the glass and give a gentle stir to dissolve the syrup and distribute the juice. These small additions amplify the orange aroma and balance the beer's tartness without changing the ABV significantly.

Brighten with citrus

Hold the beer can or bottle at a 45° angle and begin pouring slowly into the glass, aiming for the middle to create a gentle head. Fill to about 3/4 full (roughly 12 fl oz) to leave room for the cream float if using.

Pour the beer

Using the back of a spoon held just above the beer surface, gently pour the prepared vanilla cream mixture so it floats on top of the beer. It should form a thin creamy layer reminiscent of a creamsicle float.

Add the cream float (optional)

If not using the float, simply top the glass the rest of the way with the beer until nearly full, leaving a small head.

Express a small piece of orange zest over the drink to release the oils, then drop the twist or place an orange wheel on the rim. If you like extra aroma, grate a scant 1/4 tsp of fresh orange zest over the cream layer or surface.

Serve immediately with a short straw or coaster. Encourage the drinker to sip through the cream layer to get the creamsicle effect with the sour beer base.
