Spice-infused Base

Prepare spices

Crush the cardamom pods lightly with the flat side of a knife to open them. Peel and thinly slice or smash the ginger to expose more flavor. Measure out the cloves and cinnamon sticks.

In a medium saucepan, combine 4 cups water, cinnamon sticks, crushed cardamom pods, cloves and sliced/smashed ginger. Bring to a gentle simmer over medium heat.

Reduce heat to low and let the spices steep in simmering water for 8–10 minutes so the water becomes aromatic and slightly reduced.

Tea & Flavoring

Add the black tea leaves (or tea bags) directly to the spiced water. Turn off the heat and let the tea steep with the spices for 3–4 minutes for strong flavor (longer will increase bitterness).

Strain the liquid through a fine mesh sieve into the saucepan or a clean pot to remove solids (cinnamon, ginger, cloves, cardamom, and tea leaves/bags). Return the strained liquid to low heat so it stays warm but not boiling.

Stir in the honey and brown sugar until fully dissolved. Taste and adjust sweetness as desired.

Add the fresh lemon juice and dark rum (if using). Stir to combine and keep the mixture warm — do not boil after adding alcohol to preserve flavor and alcohol content.

Finishing & Garnish

Whisk in the unsalted butter and orange zest until the butter is melted and slightly emulsified into the warm drink. This adds body and a silky mouthfeel.

Add a small pinch of sea salt to brighten the flavors. Stir and taste; adjust honey/brown sugar or lemon to balance sweetness and acidity.

Ladle the warm 'Nirats Revenge' into heatproof mugs. Garnish with an optional cinnamon stick or a thin slice of orange if desired. Serve immediately while warm.
