Frozen Piña Colada (coconut-pineapple layer)
Prepare blender
Chill the serving glasses in the freezer while you prepare the layers to keep the frozen drink from melting quickly.
Combine ingredients
In a high-speed blender add 3 oz white rum, 3 oz cream of coconut, 3 oz pineapple juice, 1 cup frozen pineapple chunks, 0.5 tbs lime juice (optional).
Add ice and blend
Add 1.5 cups crushed ice. Pulse briefly to break up ice, then blend on high until smooth and thick but still scoopable (about 20–30 seconds depending on blender). Don't overthin — you want a spoonable slush.
Transfer to chilled glass
Spoon or pour the Piña Colada layer into the bottom half (or one side) of each serving glass, filling about half of the glass. Smooth surface slightly with the back of a spoon. Rinse blender if you will prepare the strawberry layer separately to prevent color bleed.
Frozen Strawberry Daiquiri (strawberry layer)
Combine ingredients
In the blender add 3 oz white rum, 1.5 cups hulled strawberries (if fresh add a few ice cubes or partially freeze first), 1 tbs simple syrup, and 1 tbs fresh lime juice.
Add ice and blend
Add 1.5 cups crushed ice. Pulse to break up ice and blend on high until you have a smooth, thick strawberry slush (about 15–25 seconds). The texture should be similar to the Piña Colada layer so the two sit together cleanly.
Garnish & serve
Optional adjustments: If one layer is noticeably thinner than the other, reduce liquid slightly in that recipe (start by subtracting 0.5 oz rum or 1–2 tbs juice) or add a few more ice cubes to thicken. Taste before serving and adjust sweetness with small amounts of simple syrup if needed.
