Prepare chilled glass

Place a coupe or chilled rocks glass in the freezer for 5–10 minutes, or fill with ice water while preparing other components to chill it.

Make the whipped cream (Crème whipped cream)

Pour the heavy cream into a small chilled bowl. Add the powdered sugar and the single drop of vanilla extract. Using a hand whisk or electric mixer, whip the cream to soft peaks — it should hold shape but still be silky and pourable. Do not overwhip into stiff peaks; you want a light, slightly billowy cream to float on the cocktail. Transfer to a small spoon or piping bag for easy topping.

Build the cocktail

Discard the ice or water from the chilled glass. In a cocktail shaker filled with the ice cubes, add the Amaretto and Kahiga (dark rum). Shake vigorously for about 10–12 seconds until well chilled and slightly diluted.

Strain and top

Double-strain the mixture into the chilled glass (if using a coupe) or into a rocks glass over fresh large ice if you prefer on-the-rocks. Gently spoon or pipe a generous layer (about 1–1.5 oz) of the prepared whipped cream on top so it floats as a creamy cap.

Garnish

Grate a small amount (about 1 tsp) of dark chocolate over the whipped cream or dust lightly with cocoa powder. Optionally express an orange or lemon twist over the drink and drop it in for aromatic lift.

Serve

Serve immediately with a small cocktail spoon so the drinker can break through the cream to sip the Amaretto and rum beneath.
