Ham and Cheese Sandwich

Fit Turkey Wrap

If using whole grains, mill the grain just before mashing. Heat approximately 4.0 gallons (15 L) of strike water to about 165°F (74°C) to achieve a target mash temperature of 152°F (67°C) once grains are added.

Mill and Heat Strike Water

Add crushed grains to the strike water, stirring to eliminate dry pockets and stabilize temperature. Hold mash at 152°F (67°C) for 60 minutes. This temperature gives a balanced body appropriate for an Irish Red (moderate fermentability, slight residual sweetness).

Mash

Raise mash temperature to 168°F (76°C) for 10 minutes to stop enzymatic activity and make lautering easier.

Mash Out (optional)

Recirculate wort until reasonably clear, then sparge with enough water to collect approximately 6.5–6.75 gallons (24.6–25.6 L) of wort in the kettle (accounting for boil-off to reach ~5.25 gallons post-boil).

Sparge

Bring the collected wort to a vigorous boil. Watch for boil-overs when the wort first reaches a boil.

Bring to a Rolling Boil

Boil for 60 minutes total. At 60 minutes remaining (start of boil) add 1.0 oz East Kent Goldings for bittering. With 15 minutes remaining add Irish moss or Whirlfloc (use the equivalent of ~1 tsp or one tablet) to help clarity. At 15 minutes remaining add 0.5 oz East Kent Goldings (flavor/aroma addition).

60-minute Boil Schedule

Stop the boil after 60 minutes. Turn off heat and begin chill process promptly.

Final Minutes

Cool wort as quickly as practical to yeast pitching temperature (68–70°F / 20–21°C) using an immersion chiller, counterflow, or ice bath. Once cooled, transfer wort to a sanitized fermenter, leaving behind most trub.

Top up with pre-boiled and cooled water to reach a total volume of 5.25 gallons (19.9 L) if needed to hit target original gravity. Check and record original gravity (target ~1.055 for ~6% ABV).

Aerate the cooled wort by shaking, splashing, or using an aeration stone. Rehydrate or make a starter for liquid yeast if desired. Pitch the Irish ale yeast when wort is at 66–70°F (19–21°C).

Pitch Yeast

Ferment at 66–68°F (19–20°C) for ~7–10 days or until vigorous fermentation subsides. Expect good attenuation from the chosen strains to reach ~1.012–1.014 FG.

Primary Fermentation

If fermentation is slow to finish or using cooler temps, raise to ~70–72°F (21–22°C) for 2–3 days near the end of primary to help clean up any diacetyl.

Diacetyl Rest (optional)

Optionally rack to a secondary for clearer beer and condition for 1–2 weeks at cellar temperature (55–65°F / 13–18°C).

Secondary / Conditioning (optional)

When fermentation is complete (stable gravity readings over 2–3 days and target final gravity ~1.012–1.014), prepare to package.

If bottling, dissolve 3.25 oz (approx. 92 g) of corn or table sugar in a small amount of boiling water, cool, and gently mix into the beer to achieve roughly 2.4 volumes CO2 (adjust to taste). Bottle and cap. If kegging, force-carbonate to ~2.4 volumes CO2.

Allow bottles to carbonate at room temperature for 2–3 weeks, then condition at cooler temperatures for a week for flavor melding.

Serve slightly cool, 48–52°F (9–11°C) in a pint glass. Expect a deep copper to reddish-brown color, moderate malt sweetness with light caramel notes, low-to-moderate hop bitterness (target ~20 IBU), and a clean finish from the yeast.
