Method
Chai Masala Latte
Make the spice decoction
In a small saucepan combine 1 cup water, crushed cardamom pods, cloves, sliced ginger, crushed peppercorns and ground cinnamon. Bring to a gentle boil over medium heat, then reduce heat and simmer uncovered for 5 minutes to concentrate the flavors.
Sweeten and finish
Stir in sugar and vanilla extract (if using) until dissolved. Taste and adjust sweetness. Strain the chai through a fine-mesh sieve into two mugs, pressing on the solids to extract liquid. Serve immediately.
Classic London Fog (Earl Grey Latte)
Brew the tea
Place two Earl Grey tea bags in a mug. Pour about 3 tablespoons hot water (just off-boil) over the bags to bloom the leaves and steep for 2–3 minutes to concentrate the flavor.
Heat and froth milk
Warm 1 cup milk on the stovetop or in the microwave until steaming (about 60–70°C / 140–160°F). Froth or whisk vigorously to create foam if desired.
Hot Chocolate (Rich)
Make chocolate paste
In a small saucepan whisk together cocoa powder, sugar and 2 tablespoons hot water until smooth and lump-free, forming a thick paste.
Heat milk and melt chocolate
Add 2 cups milk to the saucepan and warm over medium heat, stirring constantly. When the milk is steaming (do not boil vigorously), add chopped dark chocolate, a pinch of salt and vanilla. Continue stirring until chocolate is fully melted and the mixture is silky, about 2–3 minutes.
Serve
Pour the hot chocolate into two mugs, top with whipped cream or marshmallows if desired, and serve immediately.
Herbal Infusion: Honey Lemon Ginger
Simmer the ginger
Bring 3 cups water to a boil in a small pot. Add sliced fresh ginger, reduce heat and simmer uncovered for 8–10 minutes for a strong infusion.
