Prep
Prepare spreads and vegetables
Combine mayonnaise and Dijon mustard in a small bowl and stir until smooth. Wash and dry lettuce leaves. If using tomato, slice into 3–4 thin slices and pat dry. Lightly season tomato slices with a pinch of salt and a little black pepper.
Lay out 8 slices of bread on a clean work surface. Spread one side of each slice with a thin layer of softened butter (this will be the outside for toasting). On the unbuttered side of 4 slices, spread the mayonnaise-mustard mixture evenly.
Assemble Sandwiches
On the 4 slices with mayonnaise, layer 2 slices of ham each (use 2 slices per sandwich, adjust if your ham is thin or thick). Fold ham if needed so it fits evenly on the bread.
Top the ham on each sandwich with one cheese slice. If you prefer extra cheesiness, add 1 additional slice per sandwich.
If using, add 1 lettuce leaf and 2–3 tomato slices on top of the cheese. Sprinkle each with a light pinch of salt and a grind of black pepper (about 1/16–1/8 tsp pepper distributed across sandwiches).
Close each sandwich with the remaining 4 bread slices, buttered side facing outward.
Cook/Toast
Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon unsalted butter or a thin film of olive oil and let it melt and coat the surface.
Place sandwiches in the skillet (work in batches if needed). Cook for 3–4 minutes on the first side, pressing gently with a spatula or a weighted pan sandwich press, until the bread is golden brown and the cheese begins to melt.
Carefully flip the sandwiches and cook the second side for another 2–4 minutes until golden and the cheese is fully melted. Reduce heat slightly if bread is browning too quickly before cheese melts.
If you prefer oven melting (for multiple sandwiches at once), preheat oven to 350°F (175°C). Place assembled sandwiches on a baking sheet, buttered side up, and bake 8–10 minutes until heated through and cheese is melted, then broil 1 minute if you want extra browning—watch closely.
Finish and Serve
Transfer sandwiches to a cutting board. Let rest 1 minute, then cut each sandwich in half diagonally or straight down the middle.
Serve immediately while hot. Optional accompaniments: pickles, potato chips, a side salad, or a small bowl of soup.
