Cook the bacon

Heat a skillet over medium heat. Add the bacon strips in a single layer and cook until crisp, about 6–10 minutes, turning occasionally for even browning. Transfer cooked bacon to a paper towel–lined plate to drain and reserve 1 teaspoon of the rendered bacon fat. When cool, break strips in half if desired.

Prepare the guacamole

Halve and pit the avocados. Scoop flesh into a medium bowl and mash slightly with a fork leaving some small chunks for texture. Add lime juice, minced red onion, chopped cilantro, minced jalapeño (if using), reserved bacon fat (1 tsp), 1/2 teaspoon salt and 1/4 teaspoon black pepper. Mix gently and taste; adjust salt, lime or jalapeño to preference.

Prepare bread

Spread softened butter evenly on one side of each slice of bread. Heat a clean skillet or griddle over medium heat. Toast buttered sides of the bread until golden brown and crisp, about 2–3 minutes per side. Alternatively, toast in a skillet or toaster and then butter.

Assemble mayonnaise layer

Spread about 1 tablespoon mayonnaise on the non-buttered side of three toasted bread slices (these will be the inner faces). Sprinkle a light pinch of black pepper over the mayo if desired.

Build the club layers

On the three slices with mayonnaise, divide the lettuce leaves evenly (2 leaves per sandwich stack) and place them on top of the mayo. Spoon half of the guacamole (about evenly divided) onto the lettuce on each of two of those slices. On the remaining mayo-spread slice, layer half of the cooked bacon (3 strips broken as needed) over the lettuce. If using tomato, place 2–3 tomato slices over the bacon or guacamole stack as preferred. Top each guacamole or bacon layer with the remaining bacon or guacamole to create the club stack (guac + bacon + guac or bacon + guac + bacon depending on preference).

Finish and serve

Top each assembled stack with the remaining toasted bread slices, buttered side up. Press gently and cut each club diagonally into halves or quarters. Serve immediately so the toasted bread stays crisp. Optional: serve extra guacamole on the side and toothpicks to hold layers together.
