Burger Patties
Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball and then flatten to a patty about 3/4-inch thick and slightly wider than the bun. Do not overwork the meat. Use your thumb to make a shallow 1/2-inch dimple in the center of each patty to reduce doming while cooking.
Season both sides of each patty evenly with kosher salt and freshly ground black pepper, and brush or sprinkle 1/2 teaspoon Worcestershire sauce across each patty (divide the 1 teaspoon total between the two). Let rest at room temperature for 10 minutes while you preheat the cooking surface.
Preheat: Place a heavy skillet, cast-iron griddle, or flat-top over medium-high heat. Add 1 tablespoon neutral oil and heat until shimmering but not smoking, about 2 minutes.
Cook patties
Place the patties on the hot surface and cook undisturbed for 3 to 4 minutes to develop a crust. Flip once and cook the second side for 2 to 3 minutes for medium-rare to medium (adjust time 1–2 minutes more for medium-well). During the last 60 seconds of cooking, lay one slice of sharp cheddar over each patty and cover the pan with a lid or tent with foil to help the cheese melt.

Mix condiments: In a small bowl combine mayonnaise (2 tbs), yellow mustard (1 tsp), and ketchup (1 tsp). Stir to a smooth sauce. Taste and adjust to preference.
Build the burger: Spread about 1 tablespoon of the mayonnaise-mustard-ketchup sauce on the bottom bun. Place a lettuce leaf on top of the sauce (this helps prevent bun sogginess). Set the cheese-topped patty onto the lettuce. Add tomato slice(s), two pickle slices, and a few rings of red onion. If using a second cheese slice or other cheese, add it now. Finish with a light dusting of smoked paprika and a pinch of coarse sea salt over the tomato or cheese if desired.
Top bun: Spread a thin layer (about 1 teaspoon) of the remaining sauce on the inside of the top bun, then place the top bun on the assembled burger and press gently to compact. Serve immediately.
Serving & Resting
Rest briefly: Let the assembled burgers rest 1–2 minutes to allow juices to settle and the cheese to set slightly. This improves bite and prevents immediate sogginess.
Serve suggestion: Serve with fries, a simple green salad, or potato chips. Offer extra condiments at the table.
